Fresh ginger is great, but it’s something I don’t use all the time and it usually goes bad or dries out by the time I want to use it again. Since I almost always use it in cooked food, I’ve found a good way to preserve it.
Just peel and cut up the ginger, put it in a tupperware and cover it with vodka. It will keep in the fridge forever. When you cook it the alcohol burns off so you can’t tell the difference and you also get some ginger infused vodka out of it that you can use for cooking or for drinking:-)

Checkboard saysI just wipe off any dirt, then throw the root in the freezer. When I want to use any, I grate it (skin and all) until I have the required amount - it grates very easily when fozen.

Minow saysI've never tried this method but I do know that it freezes well, especially if you grate or chop it and fill an ice-cube tray - I like to do a tray that's half-and-half with Ginger one side and chopped Red-Chili the other. I just throw a cube into the pan whenever I need them.

MissJ9 saysBrilliant! I've used the frozen preservation method also, but I tend to forget about things that I've shoved into the freezer. I do not, however, easily forget about anything soaking in booze.
