Ingredients
- 3 large egg whites
- 1 cup almond meal
- ½ cup icing sugar, plus extra for dusting
- ¼ cup all-purpose flour
- ¼ tsp baking powder
- 50g butter, melted
- zest of one small lemon, finely grated
- 1 peach, sliced

How to make Peach Patty Cakes
Super simple, super yummy, and a nice change from usual muffins/cupcakes. I really like these with peaches (or nectarines), but they go well with apple (and some cinnamon instead of lemon zest, plus a cinnamon-sugar dusting instead), and wherever else your imagination takes you! (Makes 12)
- Preheat the oven to 180°C, and grease 12 patty cake tin moulds.
- Sift sugar, flour, and baking powder into a large bowl. Add in the almond meal, then stir through. Add the egg whites, melted butter, and lemon zest, and mix well to combine.
- Spoon 1 tbsp of the mixture into the patty cake tin (or a ¼ cup capacity cupcake tin will do too) and press a slice of peach onto the top.
- Bake for 15 minutes, or until puffed and golden. Remove from the tins onto a rack to cool, and dust with extra icing sugar to serve.

yehting saysshould i really need to add almond meal to it? ... if i don't have that on hands, what else ingredient i can use for? ... I REALLY WANNA TRY THIS ~ ^^

rachel saysyes! definitely add in almond meal - the flavour you get is a very, very delicate hint of nuttiness which i *love*. if you don't have it, you can try hazelnut meal, which is very finely ground hazelnuts. (almond meal is finely ground almonds.) be careful if you're pulverizing the nuts on your own that you don't get nut butter! (try googling for tips on that.) another alternative would be to use ground peanuts, but peanuts have a much stronger flavour.
