- 1 C. corn meal
- boiling water
- 4 T. flour
- 2 t. baking powder
- 3/4 t. salt
- 1 T. molasses
- 1 egg
- 1 C. milk

How to make Corn Meal Griddle Cakes
This recipe is one I tried from a 1934 edition of the Rumford Complete Cookbook. A nice breakfast recipe that I will definitely keep using.
- Scald the corn meal with just enough water to cover it. (It might be best to use a shallow bowl so the water can get to the bottom easily)
- Let stand 5 minutes, then add flour, salt and molasses.
- Thin to a batter with the beaten egg and milk.
- Add the baking powder last, beating it in well.
- Cook on a greased griddle over medium heat.
