Ingredients
1 bunch of asparagus 1/2 chopped tomato 1 clove of chopped garlic 1/4 cup white wine 1 tsp olive oil 1 tsp butter salt pepper
I first developed this dish to serve to my daughter, who I met for the first time when she was 22.
Step one: In a large saute pan on high heat add olive oil and asparagus (trimmed). Keep it moving. STep two: After the asparagus is lightly carmelized, remove, lower heat to medium and add tomato and garlic with a pinch of sea salt. Step three: When the veggies start to break down add white wine and reduce by half. Step four: Add butter and asparagus, toss and serve with a light grind of pepper.
I like to serve this with grilled fish or steak.
