Healthy Wholemeal Banana Muffins

Ingredients
- 30g Unsalted Butter
- 60g Clear Honey
- 1/2 tsp Vanilla Extract
- 2 Large, Very Ripe Bananas
- 150 Wholemeal Flour
- 1 Heaped tsp Baking Power
- 1/2 tsp Bicarb
- 1/2 tsp Cinnamon
- Pinch of Salt
Makes 6 Large Muffins
By far the easiest and most fuss free muffin recipe I've tried. This is essentially Nigella Lawson's recipe for Banana Muffins, but she uses white flour instead of wholemeal. I put in 2.5 bananas instead of 2, and substituted white flour with Waitrose organic wholemeal flour, which resulted in very heavy and moist muffins. If you are not a fan of wholemeal bread or grains, I do not recommend you use wholemeal flour as the taste is quite strong. I also halved the raising agents (Chemicals!). The great thing about this recipe is that the sugar added is minimal and there are no eggs involved!
Use the wet into dry method: 1. Melt butter, honey and vanilla over low heat. Leave to cool for a few mins 2. Mash Bananas in a bowl 3. Measure out flour, raising agents, cinnamon and salt 4. Mix melted butter with banana 5. Mix into dry ingredients. DO NOT OVER MIX! A lumpy muffin mixture is always good sign 6. Bake at 190 deg for 25mins

loopkid saysI just baked this recipe! It was fun and the result was quite tasty. I really liked the squishy little banana pieces, so i second on the "do not over mix". The amount of baking powder and bicarbonate proved just right and since the recipe uses wholemeal flour don't wonder about the brown color they quickly develop in the oven :)

sideshowjo saysAwesome! :) There must be some scientific explaination behind overmixing. Wholemeal flour doesn't give the same lift as white flour does and flavour is intense (tho I quite enjoyed it), I may try this again, using half white half wholemeal.
