Ingredients
4 slices Sourdough bread 1/3 cup fresh pesto extra virgin olive oil as needed balsamic vinegar as needed fresh cracked black pepper to taste 4 thin slices of red onion 4 thin slices of sweet red pepper 4 provolone cheese 1 large ripe beefsteak tomato, depending on size cut into 2 to 4 thick slices

How to make Grilled Tomato and Pesto Sandwich
- Brush the sourdough bread slices on both sides with the olive oil.
- Brush the tomato slices, the onions and sweet red peppers with the olive oil and place all of them on a hot grill.
- While the vegetables are grilling drizzle the tomato slices with the balsamic vinegar and sprinkle with fresh cracked black pepper. When you turn the tomatoes repeat.
- When the bread is browned on both sides remove from grill and spread the pesto on one side of each slice.
- Place the grilled tomatoes on top of two slices of the bread, on the pesto followed by the peppers and onions and finally top with the Provolone cheese and broil until melted and slightly browned. Top with the remaining bread and serve.
Makes 2 delicious (but messy) sandwiches.
