Artichoke Dip

Ingredients
- 1 can artichoke hearts
- 1 can artichoke bottoms
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 3 tablespoons mayonnaise
- 2 cups shredded cheese (cheddar / colby / jack / mozzarella all work well)
- 2 cups grated parmesan cheese
- 1 teaspoon garlic powder
- 2 teaspoon onion powder
- pinch of salt
- 1/2 teaspoon finely ground pepper
- 1 can sliced water chestnuts
- 1 jar roasted red bell peppers
this dish originated as a dip for a new years eve party featuring one dip from each attendee. its great, has lots of cheesey goodness and has veggies!
- add the sour cream and cream cheese and mayonnaise to mixing bowl and mix together into smooth paste
- drain and rinse the cans of the artichoke hearts / bottoms as well as the water chestnuts and roasted peppers
- roughly dice the artichoke parts, water chestnuts and roasted peppers
- add vegetables to bowl and incorporate into mixture
- add garlic powder and onion powder
- mix in cheeses
- salt / pepper to taste
- bake at 350F for 45 mins or until bubbly
