Curried Spinach Chicken

Ingredients
- 1 tbsp madras style curry paste
- 2 tbsp chicken stock power or substitue
- boiling water
- ghee/oil
- crushed garlic
- chopped shallots
- chopped ginger
- salt and pepper to taste
- 1/3C heavy cream or yoghurt
- boneless chicken breasts (or thighs)
1/2 to 2/3 1lb bag fresh spinach
You will need deep fry pan and a blender/food processor
- Start water to boil
- in blender, combine add chicken stock and spinach. WHEN water boils add about a cup or cup and a half, squish down spinach to ensure all is covered (in this way you are blanching the spinach)
- MEANWHILE, heat ghee/oil and paste in fry pan. add garlic, shallots and ginger, frying until softened.
- add mixture to blender and blend with spinach until somewhat smooth. Set aside.
- brown chicken in same pan with scrapings of garlic/shallots.
- pour spinach mixture over chicken and reduce heat.
stir in cream/yoghurt and heat until chicken cooked thru
TIPS: this is really saucy and my family likes it with pasta. Not enough time for dinner? cut chicken into strips! No curry paste? try a powder if you must
