Ingredients
- Tuesday's chicken carcas
- cilantro
- coarse salt, pepper, red chili powder
- scallions or green onion, chopped
- red bell pepper, choped
- celery (young leafy bits are best)
- lime
- mayo
- fresh garden greens
- wrestle down carcas and pry all the horrid bits off you were to lazy to pull off when the damn thing was still hot
- in bowl, combine chicken with seasoning, scallions, onion, pepper, and celery
- squish and roll lime about on counter to release juices. add as much zest (rind) from lime to bowl as possible (if you don't have a zester, drag a fork across peel). cut lime in half and squeeze out all the juice. STIR IN LIME RIND AND JUICE, SET ASIDE IN FRIDGE.
- DO NOT ADD MAYO UNTIL JUST PRIOR TO MEAL TIME. serve over bed of fresh greens.
