Ingredients
- 1 onion
- 1 chicken bone (i have gone back to find out that it's called a chicken rack lulz!)
- 4 drumsticks
- 2 potatoes
- 4-5 baby carrots with the leaf and stems still attached, will explain later why I chose these ones
- 6 mushrooms
- 2 stalks of spring onions
- 4 cloves of garlic crushed
- salt & pepper
- optional chicken stock, I don't use it but you can if you like more flavour
Before we begin i'll tell you why I used those carrots instead of the normal ones. It's because for some reason I find that the baby carrots that come with the leaves and stalks still attached somehow absorb flavour better than normal baby carrots or even normal sized carrots. Maybe it's psychological in the sense that they look more tasty and rustic but it works for me!
Let's begin!
- Prepare all the vegetables, like wash and peel carrots and potatoes then dice potatoes. Slice up onion. Wash mushrooms and spring onions and slice those up to. Peel garlic and smush the cloves with a knife.
- Put the chicken rack, chicken drumsticks, onions, garlic, potatoes and carrots into a pot or a double boiler and boil them up! I personally used a double boiler because it keeps the chicken meat more tender and the overall soup/stew is much more flavourful!
- Because I used a double boiler, I usually take the pot off the fire after it's been boiling for a few minutes then shove it into the urm other pot thing for about 20 minutes, then check to see if everything is well cooked. But if you're using a conventional pot, I suggest putting it on boil for about 5-10 minutes them simmering it till the potatoes are soft.
It's a really simple recipe that I always make when I have bad days. It's a feel good, not too heavy homely dish.

rachel saystellie, i swear to god you're the angsty one. haha. first you're reading jazz as jizz and now i find out you've been checking out some poor chicken's rack! hahaha. anyway, jai if you need help.... chicken carcass might be easier for most of us to explain in the supermarket, i think, instead of giving the sales assistants a fit of the giggles. otherwise just find whatever bones you can (say the carcass left over after you do a roast?) or a bunch of the wings and necks should do the trick too.

Spiralbound saysDon't let them razz you too much, I grew up hearing the 'leftover bits' of a bird carcass being called the "rack" as well! I'm from Newfoundland, so maybe it's an island thing, no? I knew just what you meant! :-)
