    This looks like Pakode that are commonly made in India. You can also use potato slices or even spinach leaves instead of eggplant. Try it.

    Thanks for commenting on my eggplant dish, I think we must be kindred spirits because I also made eggplant fritters with tomato chutney last week, but the photos didn't turn out-I'll give your recipe a try next.
