Chicken w/ Cashew Nuts

Ingredients
- Boneless chicken
- Diced Carrots
- Diced Cooking Onions
- Diced green peppers
- Mushrooms
- Cashew Nuts
- Chinese Parsley
- Garlic
- Ginger
- Olive Oil
- Oyster Sauce
- Soya Sauce
- XO Sauce
- Cooking Wine
- Hot Peppers
- Starch
- Sesame Oil
My friend from Singapore gave us a can of homemade cashew nuts. I thought that it would be a good chance to make the 'Kung Pao Gai Ding' dish with the cashew nuts.
Step 1: Cut up all the ingredients.
Step 2: Heat up a cooking wok. Add about a tablespoon of olive oil. Add the ginger and garlic. Stir Fry until brown.
Step 3: Add the chicken and stir fry until cooked.
Step 4: Add the carrots, onions, green peppers, mushrooms and stir fry until soft. Add about 1/2 cup of water. Add the oyster sauce, soya sauce and XO sauce to taste. Add the hot peppers.
Step 5: Add the cashew nuts. Add a couple tablespoons of cooking wine. Stir fry for about 2 minutes.
Step 6: Mix the starch with cold water and add to wok. This will thicken up the sauce. Add the chinese parsley and sprinkle some sesame oil. Serve.
