Herbal Prawn Soup

Ingredients

  • 4 small pcs of chun kung (川公?)
  • 5 pcs of huai shan (淮山), soaked overnight
  • 8 pcs of dang shen (当参)
  • 1 tbsp of gou qizi (枸杞子)
  • 5 red dates (红枣)
  • 400g FRESH prawns, cleaned but keep shells intact
  • 300g chicken
  • 1L hot water
  • salt to taste

Love prawn? Love herbal soup? Remember to use fresh prawn or live prawn even better.

  1. Prepare stock by simmering herbs and chicken for 2.5 to 3 hours. Remove chicken.

  2. Add prawns into herbal stock and bring to a quick rapid boil until prawns are cooked.

  3. Add salt to taste and serve hot.
