Teriyaki Chicken Rice Burger

Ingredients
- 1 Chicken Drumstick or Breast, deboned
Marinade:
- 1 tablespoon sugar
- 1 tablespoon Mirin
- 1 tablespoon wine
- 2 tablespoon soy sauce
Others:
- 1/2 bowl of cooked rice, shaped into rice cake
- 3 Lettuce leaf
- 1 slice Onion, Saute to slightly brown
- 1 slice Tomato
- A squeeze of Mayonnaise
- 1 strip Nori
- Mix the marinade.
- Pour the marinade over the chicken and 3. 4. marinate for at least ½ hour.
- Dust chicken with corn flour and sauté in pan till lightly burnt. Pour away excess oil.
- Pour the remaining marinade for the 7. chicken in the pan.
- Cook till the sauce thickens.
- Place chicken on lettuces & tomato and top it with onions, mayonnaise and rice cake.
- Wrap it with a strip of Nori.
Note: The small rice burger on the right in a pork patty rice burger for my son.

iconsam saysHow did you get the rice buns to stick together? Did you add any vinegar to the rice?

wokkingmum saysIconsam, I didnt add vinegar. You may of course! To stick the rice together, just scoop out enough rice and squeeze it (using your bare hands) - just like rice ball. You can use cling wrap if you find it difficult to handle using hands. ;)

Mariska saysmaybe you using japanese rice( short grain rice, they are rather sticky than long grain rice they are rather sticky isn't it
