Lazy Girl's Goat Cheese and Mozzarella Pizza

Ingredients
- 2 heaping tablespoons of goat cheese- 1/4 package of portobello mushrooms, sliced thinly
- 1/4 cup of fresh mozzarella, diced
- 1/4 yellow onion, small dice
- 4 slices of toasted white bread, crusts removed, chopped into bite size pieces
- 4 slices of a ripe tomato
- garlic powder
- olive oil
- pepper to taste
No dough? No problem! Use toast! lol
For cheese mix:
1. Fry onion in oil until completely tender and slightly browned. Set aside
2. Wilt spinach in the same pan. Remove and drain excess liquid. Bring mushrooms to the same pan and add salt. Cook until tender, remove from heat, set aside and discard excess water.
3. In a large mixing bowl, combine spinach, onion, mushrooms, goat cheese and mozzarella. Add garlic powder and pepper to taste.
Assembling the "pizza"
1. In a pie pan or baking sheet, arrange toasts and layer with the 4 tomato slices.
2. Generously spoon the cheese mixture on top of tomatoes. Drizzle with olive oil.
3. Place in a 350F oven until tomatoes look slightly wrinkled and cheese is gooey.
4. Completely optional, but delicious if served with a drizzle of balsamic vinegar.
