Lemon, Garlic & Dill Flounder on a Bed of Spinach

Ingredients
Flounder- 6 flounder fillets
- dill
- 3 cloves garlic, sliced
- olive oil
- 1/2 lemon in slices
- sea salt and pepper to taste

For a clean-flavored, quick and healthy lunch or dinner, the flounder can be prepared on its own. For a little more decadence, serve with creamy spinach.
1. Sprinkle 1/2 teaspoon of olive oil in an oven-safe casserole. Place 3 flounder fillets into the casserole and season with salt and pepper. Layer with half of the garlic slivers.
2. Layer with remaining fillets, garlic, salt and pepper. Cover with dill sprigs and lemon slices.
3. Place in 400 degree F oven for ten minutes or until fish is opaque.
