Ingredients
makes 16-20
- 2 potatoes, peeled and diced
- 3 tbsp ricotta cheese
- 3 tbsp Mozzarella cheese, grated
- salt and pepper to taste
- oil, for fry
- parsley, for garnish
For batter
- flour
- cayenne pepper
- paprika
- water
still testing some recipes, then i can present it at the party. Even i really got some ideas for the big day, but i can't stop cooking ^^ i think this one is very simple, very light, and you can get rid of the rest of potatoes in the pantry that you don't know what to cook in different ways. Maybe you can add meat in, like sausage, ham or bacon, that will give it more fancy texture and taste too.
Cook the potatoes until soften, then transfer to a bowl and mash it roughly. Add the remaining ingredients into the bowl, mix well. Set aside, let it cool slightly.
Combine all ingredients for the batter, be careful not to thick and not to thin. You can decide how spicy it is, i add cayenne pepper just a little bit to give the batter some colors.
Divide potatoes into little balls, coating batter then fry them until golden brown, just about 2 minutes per side. Serve with ketchup or hot sauce, or all other sauces you prefer.














oh. this is really a good way to get rid of the potatoes. And makes a nice snack too.
