Onion Soup with Cheese Croutons

Ingredients

For Soup:

  • 1 t butter
  • 2 medium onion, thinly sliced, about 2 cups
  • 1/8 t black pepper
  • 1/4 cup dry red wine
  • 1 + 1/2 cups less-sodium chicken broth
  • 1 + 1/2 cups water
  • 1/8 t dried thyme or parsley
  • salt to taste

Cheese Croutons:

  • store bought croutons
  • grated Mozzarella cheese

I love my friend, Winnie's onion soup very much, even there is too much red wine for me :)

so i change her recipe a little bit, and add some cheese croutons on top, let it look more fancy~

  1. Melt butter in a medium saucepan, add onion and pepper to pan. Cook 15 minutes or until golden brown, stirring occasionally. Stir in wine, cook 2 minutes or until wine almost evaporates.

  2. Add broth, water and thyme, bring to a boil. Cook until reduced to 2+1/2 cups, about 15 minutes. Add salt to taste.

  3. Preheat broiler. Place croutons on a baking sheet, sprinkle cheese on top, bake until cheese melts.

  4. Pour soup into a serving plate, place 2 to 3 cheese croutons on top, serve immediately.
