Ingredients
1 cup whole-wheat flour1 cup all-purpose flour
2 tbsp white sugar
1/2 cup unsweetened pumpkin pure
1 cup low-fat buttermilk
1 tsp baking soda
1 tsp salt
2 tsp baking powder

How to make Easy Pumpkin Cookies
Preheat the oven to 325°F. Lightly grease a baking sheets, set aside.
Combine the flours with the sugar, baking powder, the salt and the baking soda. In another bowl combine the pumpkin pure with the buttermilk, then stir in the flour mixture. Drop by tablespoonfuls onto the greased baking sheets, flat the cookies with the back of the spoon. Sprinkle with some extra white sugar. Bake in the preheated oven about 25-30 minutes.

zoridream saysI found this recipe in one low-fat or fat-free site, I don't remember exactly. That's why there is no too much sugar and no fats. I like these because I'm a fat-free maniac. Probably it's possible to add some tbsp of butter or shortening and some more sugar. The next time I'll try to add it melted and lightly cooled to the liquids first.

Can you check your recipe? Is that correct? I made it, and the result was not cookies. There is too much flour and not enough sugar, and no fat for taste. This might make a pumpkin nice bread if you add some yeast, but as it stands it doesn't taste remotely like a cookie.
